Watermelon Mojito Recipe

2 oz White Rum
2 oz Watermelon Puree
1 oz Lime juice
1/2 oz Mint-infused simple syrup (1 oz if you like it sweeter)

Finish with San Pelligrino
Garnish with fresh mint

Directions:

This is a good, refreshing summer drink!

WATERMELON PUREE: Blend about three cups of fresh water melon cubes. Let it chill in the fridge and “settle” a bit; about 30 mins. Strain out the sediment using a mesh strainer or colander and, there you have it! Watermelon puree!

MINT-INFUSED SIMPLE SYRUP: Bring 1/2 cup of water, 1/2 cup organic cane sugar, and about 20 mint leaves to a boil; just until the sugar melts. Let is cool a bit before refrigerating for about 30 minutes. I pour mine into a salad dressing decanter like the one below. That way you can keep the mint in when you add it to the drink

Add the rum, simple syrup, watermelon puree, and fresh lime juice to a tall glass and give it a stir. Fill the glass with ice then top with San Pelligrino and garnish with fresh mint! Now, take it outside and play some yard games…just don’t drop the glass!
